Muskoka Kale Salad With Maple Sumac Dressing

1/3 cup extra virgin olive oil

1/4 cup balsamic vinegar high quality

1/4 cup maple syrup

1.5 tsp ground sumac

1 tbsp almond butter

4 cups kale, washed leaves torn or chopped

1 beet plus greens raw or cooked, grated or chopped. Greens added to kale

2 carrots grated

1/2 red onion minced

1/2 cup fresh blueberries

1/2 cup walnuts

1/4 cup fresh mint leaves, or sage optional


  1. Combine oil, vinegar, maple, sumac, and almond butter in a small jar and whisk. Alternatively, you could blend this in a blender. Set aside

  2. Combine kale, beet greens, onion, carrot, beet, berries, walnuts and herbs in a large salad bowl. Toss with dressing and serve.
